i make this potato fry as a side dish with sambar or rasam. so this time again i thought of taking pics and adding the recipe. there are some recipes i make often, but have never posted them. somehow some of these recipes which i make often do not get added. what we do often or as a routine, always gets overlooked. so i have decided to add these everyday recipes too and you must have seen lately many such recipes being posted.

i make this potato fry with both baby potatoes or regular potatoes. i always add pearl onions in this recipe as it gives a nice taste. but you can add regular onions too. sambar powder is also added. but if you do not have sambar powder, you can skip it completely and add some other spice powders. i have mentioned the substitutions for sambar powder in the step by step pics.

serve this baby potato fry as a side dish with rasam-rice, sambar-rice or even with chapati or pooris.

  1. rinse and then steam 250 grams baby potatoes, in a steamer or pressure
  2. cook. for pressure cooking, cook for 2 whistles.
  3. when the potatoes become warm, peel and keep them aside.
  4. heat 1 tbsp sesame oil in a pan. keep the flame on a low and add the mustard seeds and crackle them.
  5. then add the cumin seeds and saute till they splutter and change color.
  6. now add ¼ cup sliced pearl onions or chopped onions, 6 to 7 curry leaves and a
  7. pinch of asafoetida.
  8. saute till the onions turn translucent.
  9. add the peeled potatoe and stir them very well.
  10. now add the spice powders – ¼ tsp turmeric powder, ¼ tsp red chili powder, 1 tsp sambar powder. for a spicy taste, add ½ tsp red chili powder. if you don’t have sambar powder, then add ¼ tsp coriander powder and ¼ tsp garam masala powder.
  11. mix the spices with the ingredients and potatoes, in such a way that they coat the potatoes evenly.
  12. add salt and stir again.
  13. saute the potatoes for 4 to 5 minutes on a low flame. then add chopped coriander leaves.
  14. stir and switch off the flame.
  15. serve baby potato fry as a side dish with rasam-rice, sambar-rice or dal-rice. you can also have the potato fry with chapati.
